Instructions: * Note: Pea shoots consist of the stalks, tendrils, and tender leaves of snow and garden peas, and they are harvested before the peas have a chance to form. Theyre available in spring and early summer at farmers markets, specialty-food stores, and Asian groceries.

Heat olive oil in a large skillet over medium-high heat. Add pea shoots, and saute until just wilted, about 3 minutes. Taste, and adjust for seasoning. Remove from the heat; add lemon zest.
