Ingredients:
Amount Ingredient
2 tbl Butter or margarine
2 tbl Cooking oil
2 cup Sliced cooked sweet potatoes or yams
2 x Plantains, peeled & chopped
1/2 cup Chopped green onion
1/2 cup Chopped cooked ham (opt)
1 x Garlic clove, minced
1/2 cup Chicken or beef broth
2 tbl Butter or margarine
2 tbl Chopped fresh thyme, dill, chervil, or savory
Salt to taste
Instructions:
Instructions: In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes, plantains, onion, ham, if desired, and garlic.

Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10 minutes or until plantains are tender. Add remaining butter and desired fresh herbs. Season, to taste, with salt and pepper.
