Instructions: Put the red pepper in a baking dish and cook in a hot oven (200 degrees C/400 degrees F/Gas 6) or under a hot grill until it deflates and blackens in patches.
This will take about 20 minutes in the oven; less under the grill. Peel away and discard the skin. Chop the pepper finely. Cut the prepared squid into thick rings. Warm the oil (just enough to cover the bottom) in a saute pan. When it is hot add the garlic and spring onion and cook until the onion is tender and the garlic is starting to brown. Add the squid rings cooking over a high heat then the crushed chillies the chopped pepper and the parsley. Toss the squid around the pan season with salt and lemon juice and serve sizzling.
