6 tbl unsalted butter
16 lrg fresh black tiger prawns (10 to 15 count), peeled and deveined
2 tbl shallots, finely chopped
2 tbl garlic, finely chopped
1/2 cup dry white wine or sherry
Juice of 1 lemon
2 tbl fresh chervil, chopped
Instructions:
Instructions: In a large saute pan, melt 2 tablespoons of the butter and saute the prawns on medium-high heat for 2 minutes, or until the prawns turn pink.

Add the shallots, garlic, and wine and cook for 4 minutes, or until the wine is reduced by about half.

Add the remaining butter, the lemon juice, and chervil. When the butter is completely melted, add the salt and black pepper. Serve immediately.

YIELD: 4 APPETIZER SERVINGS
