Instructions: *NOTE: Peel tomatoes, cut into wedges
Saute tomatoes in nonstick skillet with as little extra virgin olive oil (as you can get away with using) for 2 minutes on each side. Squeeze lemon juice over sauteed tomatoes, and season with salt and freshly ground black pepper. Scatter minced scallions over tomatoes, or minced garlic and thin strips of fresh basil.
