Instructions: Heat the oil in large saute pan, add the onion, garlic, zucchini, and bell pepper and saute for 4 to 5 minutes. Add the tomatoes, chile, salt, pepper, oregano, and parsley Cover the pan and simmer for 6 to 7 minutes or until the zucchini is tender. Serve topped with a small amount of feta cheese crumbled over each serving.
SERVING SUGGESTIONS: This is a smashing summer dish served with very thin slices of roast pork. To add an extra splash of color, spoon the zucchini, tomatoes, and chile mixture into a radicchio leaf. Email this Recipe:
