2 tbl Olive oil
2 med Zucchini cut 1/2"-thk slices
2 med Yellow squash cut 1/2"-thk slices
1 lrg Red onion sliced thin
1/2 tsp dried thyme
1 tsp Salt
1/2 tsp Freshly-ground black pepper
1 can Stewed tomatoes - (14 oz)
Instructions:
Instructions: In 1 large or 2 large medium skillets, heat the oil over medium heat. Add the zucchini, yellow squash, onion, thyme, salt, and pepper, and cook, stirring for about 7 minutes. Stir in the tomatoes and parsley and simmer for 7 to 10 minutes or more over medium heat, stirring occasionally. Cover the pan and keep warm until ready to serve.

Transfer to a warm serving platter and serve family style.

This recipe yields 12 servings.
