Instructions: Brown meat well in fat in heavy kettle or roasting pan.
Slip a low rack under meat. Add onions, tomato paste, water, and seasonings. Cover tightly. Simmer over low heat or bake in moderate oven (350 degrees ) for 3 hours or until tender. Add potatoes and carrots. Cook 30 minutes longer. Place on deep platter. This recipe yields 6 servings.
