Instructions: Thaw spinach souffle in microwave at MEDIUM (50% power) 6 to 7 minutes.
Stir together spinach souffle and next 4 ingredients until well blended. Shape mixture into 16 patties. Chill 8 hours. Stir together egg and 1/4 cup water. Dredge patties in flour; dip in egg mixture, and dredge in breadcrumbs. Pour oil to a depth of 1/2 inch into a large heavy skillet. Fry patties, a few at a time, in hot oil over medium-high heat 2 to 3 minutes on each side or just until golden brown. Drain on paper towels. Toss salad greens with dressing. Place on individual salad plates; top with tomato slices and cheese patties. This recipe yields 8 servings. Email this Recipe:
