1 pkt spinach souffle - (12 oz)
1 pkt cream cheese - (8 oz) softened
2 x logs goat cheese - (3.5 oz ea)
1 tsp coarsely-ground black pepper
1/4 tsp salt
1 lrg egg
1/4 cup water
1/2 cup all-purpose flour
2 cup Italian-seasoned breadcrumbs
Vegetable oil as needed
8 cup mixed salad greens
1 cup oil-and-vinegar dressing
Instructions:
Instructions: Thaw spinach souffle in microwave at MEDIUM (50% power) 6 to 7 minutes.

Stir together spinach souffle and next 4 ingredients until well blended. Shape mixture into 16 patties. Chill 8 hours.

Stir together egg and 1/4 cup water. Dredge patties in flour; dip in egg mixture, and dredge in breadcrumbs.

Pour oil to a depth of 1/2 inch into a large heavy skillet. Fry patties, a few at a time, in hot oil over medium-high heat 2 to 3 minutes on each side or just until golden brown. Drain on paper towels.

Toss salad greens with dressing. Place on individual salad plates; top with tomato slices and cheese patties.

This recipe yields 8 servings.
