Instructions: REMOVE giblets and neck from chicken, and reserve for another use. Rinse chicken with cold water; pat dry. Pierce chicken cavity with a fork, and sprinkle with salt.
PLACE 2 peppers and several pieces of carrot, onion, and celery in cavity. Place chicken in a lightly greased large roasting pan; arrange remaining vegetables around chicken. BAKE, covered, at 375 for 2 hours, basting with pan drippings every 30 minutes. Uncover and bake 20 to 30 more minutes or until golden brown. Yield: 4 to 6 servings. Email this Recipe:
