To add extra flavor, you can prepare this soup substituting fat-free chicken
broth for some or all of the water.
6 lrg Vidalia onions (or other sweet onions) - chopped
6 x carrots - chopped
1 lrg head cabbage - chopped
1 lrg bunch celery - chopped
1 x (16-oz) can tomatoes - peeled & chopped
Instructions:
Instructions: Chop all vegetables into bite-size pieces. Place in a large soup pot; add enough water to cover. Bring to a boil; cover, reduce heat, and simmer until vegetables are tender (15 to 20 minutes).

Add more water, if necessary, to reach desired consistency. Stir in soup mix; season to taste with salt and pepper and simmer for 10 minutes more.

Serves: 8
