Instructions: In a large non-stick skillet, saute the green onion and shallot in the olive oil for 3 minutes to soften. Add the peas and garlic and continue to saute the mixture an additional 3 to 4 minutes or until the peas are tender.
Add the remaining ingredients, season to taste with the crushed red pepper flakes, salt, and pepper, and cook the mixture an additional 2 to 3 minutes or until the spinach is tender. Transfer the mixture to a large bowl for service. This recipe yields 6 to 8 servings. Email this Recipe:
