Ingredients:

1/2 cup flour, plain
1 tsp yeast, dried
2 tbl sugar (caster)
1/2 x onions, medium
2 tsp dill
1 tsp salt
1/4 tsp bicarb of soda
1 cup cottage cheese
1 tbl butter
Instructions:
Instructions: Finely dice onion.

Combine 1/2 the flour with the yeast, sugar, onion, dill seeds, salt, and soda.

Heat the cottage cheese in microwave until lukewarm and add to the flour mixture. Add the egg and blend well. Beat in the remaining flour. Cover and let rise in a warm place 50-60 minutes or until doubled in bulk.

Butter a 4 litre casserole.

Press down dough to deflate, turn into casserole and let rise again 30-40 minutes.

Preheat oven to 350F/190C degrees and bake 40-45 minutes, until golden brown. Brush with melted butter and sprinkle with coarse salt.

Cool in casserole for 15 minutes then turn out on a wire rack to cool completely. This bread is also delicious when used to make melba toast.
