700 gm white fish milk for poaching
1 tbl oil
4 x leeks trimmed washed and sliced
4 stk celery scrubbed and sliced
150 gm button mushrooms wiped and halved
4 x hard boiled eggs peeled and quartered 450ml milk
40 gm flour
40 gm butter
1 x salt and pepper
----------------- Crumble topping: ----------------
150 gm wbolemeal breadcrumbs
100 gm cheese grated
2 tbl chopped fresh herbs or 2 tsp mixed dried herbs
Instructions:
Instructions: Poach the fish in the milk until cooked about 10 to 15 minutes in the roasting oven.

In a saucepan heat the oil and gently fry the leeks and celery.

When softening add the mushrooms and cook until soft.

Remove any skin and bones from the fish. Put the fish mixture into a shallow ovenproof dish and add the eggs and vegetables.

Make a white sauce with the milk flour and butter.

Season and pour over the fish.

Mix the breadcrumbs grated cheese and herbs together and sprinkle over.

Dot with slivers of butter and bake with the ovenshelf on the floor of the roasting ovenfor 30 to 40 minutes until golden brown.

Savoury crumbles are delicious for family meals. Ring the changes with different fish cod haddock whiting. This can be prepared in advance and reheated in the roasting ovenuntil hot right through and golden on the top.
