Instructions: In a pot, slowly fry a handful of finely chopped scallions (4 to 5 chopped green onions) for a couple of minutes in a glug of olive oil (1 tablespoon) and a pat of butter (1 tablespoon).

Then add 2 handfuls (2 cups) of fresh or frozen peas and cook for another couple of minutes before adding a good glass of dry white wine (1 cup). Bring to the boil and simmer for a few minutes before adding 4 huge handfuls of spinach

(four (6-ounce) packages of washed fresh spinach).

Turn this over and cook until the spinach is wilted. Add 2 huge pats (3 to 4 tablespoons total) of butter and season well to taste (with salt and freshly ground pepper).

Note: The amounts in parentheses worked perfectly when this recipe was tested.
