Instructions: In a small bowl, combine the granulated sugar and 1/2 teaspoon of the cinnamon. In a shallow 2 1/2-quart oven-safe, microwave-safe casserole, mix the apples, raisins, water and the sugar mixture. Cover and microwave on high power for a total of 5 minutes; stop and stir after 2 minutes.
In a medium bowl, combine the brown sugar and the remaining 1/2 teaspoon cinnamon. Blend in the margarine or butter and corn syrup with a fork. Stir in the bread crumbs just until incorporated. Sprinkle evenly over the apples. Bake at 400 degrees for 15 to 20 minutes, or until the topping begins to brown and the apples are tender. Serve warm. Think ahead: Even though this dish doesnt take long to prepare, you could make it ahead and reheat individual servings in the microwave. Leftovers are also good microwaved for just a few seconds. This recipe yields 8 servings. Comments: Cooking the apples in the microwave first cuts down the amount of baking time needed to prepare this easy apple-raisin combination. This could double as a light dessert with frozen yogurt. Email this Recipe:
