4 slc bacon, cut into 12 to 16 pieces, fried crisp, drained
1/2 cup cubed white bread
1/4 cup butter
1 med Vidalia or sweet type onion, peeled, chopped
1 x (28 oz.) can diced tomatoes in juice
1/2 cup dark brown sugar, packed firm
1 tsp table salt
1/8 tsp black pepper
Instructions:
Instructions: Preheat Oven to 350 Degrees F. In a saucepan over medium-low heat, fry bacon pieces until crisp. Lay bacon on paper towels to drain. Reserve bacon drippings in pan. Add cubed bread to bacon drippings and saute over medium-low heat until cubes are golden, stirring often. Place bread cubes on paper towels. Melt butter over low heat, being careful NOT to burn it.

Add onion and saute until somewhat translucent. Do NOT brown. Add tomatoes, sugar, and seasonings. Mix well. Cook until hot through. Place bread cubes in a buttered baking dish - enough to make 1 layer in bottom of dish. Pour tomato mixture over it. Sprinkle with crumbled bacon. Bake about 35 minutes at 350 degrees. Top with grated cheese and bake another 10 minutes.

Serves 4 to 6
