Instructions: Separate any corals from the scallops and set them aside.
Slice each scallop horizontally into two flat discs. Brush some olive oil over a ridged heavy cast iron frying pan or a nonstick frying pan and over the scallops. Place the remaining olive oil in another frying pan and when it is hot add the sliced mushrooms and the peppers and stir over medium heat for 56 minutes. Add some seasoning the corals the garlic and the herbs and cook for 23 minutes longer. While the mushrooms and peppers are cooking heat the pan for the scallops and when it is almost smoking put in the scallops and allow them a minute on each side at most. Toss into the mushroom mix and serve. Scallops do not need a lot of cooking. Here just searing quickly in a sparingly oiled frying pan is enough.
