1 tbl lemon juice

Instructions:
Instructions: Heat the olive oil in a large nonstick skillet over medium-high heat. Add the shrimp and saute until they start to turn pink, about 30 seconds. Add the garlic and saute 30 seconds longer.

Stir in the tomato, lemon juice, a dash of salt and a few grinds of black pepper; reduce the heat to medium-low and simmer until the shrimp are pink and just cooked through, about 3 minutes.

Taste for seasoning and serve immediately, over rice or pasta if desired.

This recipe yields 2 servings.

Comments: Scampi - a term used here to describe a simple preparation for large shrimp - is popular throughout Italy. Its a great Friday night celebration dinner. Youll want to have everything ready - the rice simmering, shrimp peeled, tomato chopped, etc. - before you start cooking, because the shrimp should be served as soon as they are cooked. Serve with crusty bread, a big salad and chilled white wine for a good start to the weekend.

This recipe can easily be doubled to serve 4.
