Instructions: Beat eggs, add milk, sift dry ingredients and add. Add melted butter. Let stand 1 hour (or overnight), then stir well and brown on hot griddle. Spread with jam. This is typical Scandinavian cooking - no leavening, just the cold egg mixture and a hot pan. Try to avoid too many bubbles; stirring will do nicely rather than a full-fledged beating. These are dinner plate size...a pile of them with various filling between each pancake are quite nice when sliced like a pie (or layer cake) and served with a berry syrup.
