450 gm fresh or frozen cranberries
225 gm granulated sugar
zest and juice of 1 orange
50 ml port
50 ml cider vinegar
1 lrg pinch of ground allspice
Instructions:
Instructions: Measure all the ingredients into a shallow stew pan and bring to the boil on the boiling plate.

Place uncovered in the simmering oven for about 1 hour stirring from time to time.

Dont worry if it looks a bit runny as it thickens when it cools (so long as the cranberries are soft).

Gently reheat to serve with hot game casseroles and roast game birds. Its good with turkey too. If youre worried that you might forget something in the simmering oven with the aga there are no cooking smells to alert you simply tie a bright coloured ribbon to the front rail. This will catch your eye and remind you. A timer is a must too.
