Instructions: Flavouring (vanilla pod cinammon stick lemon or orange zest)
Stir the water with flavouring and sugar over a medium heat until dissolved. Bring to me boil and simmer for 10 minutes. Cover and cool. Remove flavouring. Store in the fridge until needed. Freezing sorbets info If you have a sorbetiere follow the manufacturers instructions. If not preset the freezer to its coldest setting. Pour the mixture into a shallow container and whip into the freezer. When the edges are set to a crust but me inside is runny (about 1 hour) break up me edges with a spoon pushing them towards the middle. Retum to the freezer repeat once or better still twice men freeze until the mixture is set but not rock solid. Working fast scoop into a bowl and beat hard or process until smooth and slushy. Quickly replace in container and finish freezing Serving sorbets and granitas info If it is an ice that contains little or no alcohol transfer the container from the freezer to the fridge about 30 minutes before you want to dish up.
