Ingredients:

2 kg (4lb) fish
2 tsp lemon juice
30 gm (1oz) butter
1 cup breadcrumbs
1 sm onions
1 tsp lemon rind, grated
salt and pepper to taste
1 tsp parsley
----------------- Sauce: ----------------
1 tsp cornflour
1/2 cup vinegar
2 tsp brown sugar
1/4 tsp salt
1 tsp tomato sauce
1 tsp soy sauce
2 tsp lemon juice
1 tsp sherry
Instructions:
Instructions: Wash and dry fish and remove eyes. Rub over inside and out with lemon juice. Rub butter into breadcrumbs and combine with onion, lemon rind, salt and pepper, parsley. Spoon this stuffing into the fish and close with a skewer. Roll in foil and place in baking dish with butter. Bake in a moderately slow oven at 180 C (350 F) for 30 mins. Test with a skewer.

Sauce:
Mix cornflour with a little cold water and add all other ingredients. Cook over medium heat for a few minutes until sauce thickens. Serve schnapper on a hot plate and pour over sauce. Serve with salad and/or potato chips.
