4 x eggs
500 gm sausage mince
2 tsp parsley, chopped

1 cup breadcrumbs
1 x eggs
Instructions:
Instructions: Hard boil eggs, 10 minutes.

Mix the chopped parsley into the sausage meat. Divide the sausage meat into 4 even portions and flatten slightly into an oval shape. Lightly flour the eggs, place one in the middle of each piece of sausage meat. Fold the meat over the egg and smooth the join.(A slightly wet hand will help to smooth the mince).

Lightly flour each meat ball, dip in beaten egg and coat in breadcrumbs.

Heat oil in a pan and fry until golden brown, allowing time for the sausage meat to cook through.

Cut in half lengthways and serve with tomato or bbq sauce.
