Instructions: Break the eggs into a microwaveable pie plate; mix just until yolks mix with whites.
Microwave on HIGH for about 2 minutes, or until eggs start to set around the edges. Push the edges to the center of the plate and repeat at 1-minute increments, until eggs are set. Allow set eggs to cool, then chop finely. Add the remaining ingredients; mix well. Serve, or cover and chill until ready to serve. This recipe yields 1 1/2 cups. Yield: 1 1/2 cups Email this Recipe:
