2 tbl butter
4 x eggs beaten
2 x flour tortillas - (10" dia)
1/2 lb cooked crumbled chorizo
1/2 cup grated Manchego or Jack cheese
Avocado slices for serving
Sour cream for serving
Instructions:
Instructions: Melt 1 tablespoon butter in medium skillet over medium heat. Add eggs and cook, stirring, until eggs are just set but still a little wet. Remove from heat and set aside.

Melt remaining butter in large skillet over medium-low heat. Put 1 tortilla in skillet, then spread scrambled eggs, chorizo and cheese over top. Top with remaining tortilla. Cook until cheese melts and tortilla is lightly browned, turning once, about 3 to 4 minutes a side.

Cut into wedges and garnish with avocado slices, sour cream and salsa.

This recipe yields 2 servings.
