Instructions: Heat the water and sugar in a pan stirring until all the sugar has dissolved.
Take off the heat cool slightly and add the lemon juice and essence. Cool completely and bottle. Store in the refrigerator Dilute some of the sherbet with water and serve with plenty of ice. This sherbet is one of the many that are served in India. Countless seasonal sherbets made of exotic fruits like lychees guavas and papaya are stored in the pantry but when the best fruits are no longer available essences are used.
