Ingredients:

1 lb fish fillets cut in 1" cubes
1 cup julienned carrots
1 lrg green pepper cut 1/4" strips
2 tbl vegetable oil
2 lrg tomatoes peeled, and
cut into wedges
1 cup sliced onions
1 tsp salt
1 tsp basil or dill
Instructions:
Instructions: Saute onions, carrots and green pepper in oil over medium heat for 5 minutes. Add fish and remaining ingredients; stir well. Cover, reduce heat, and simmer for 10 minutes or until fish flakes easily and is no longer translucent in the center.

This recipe yields 6 servings.
