Ingredients:
Amount Ingredient
1 lrg head romaine lettuce leaves separated
and washed (or abt 12 cups washed and torn greens)
1/4 cup salad dressing of choice - (to 1/3 cup)
(honey-mustard, Caesar, Italian, blue cheese, etc.)
1 lb total of 1 or more of the following:
Tiny cooked shrimp
Flaked cooked crabmeat, lobster meat,
crawfish meat or surimi crabmeat
Chopped or flaked smoked salmon, trout,
bluefish or mackerel
----------------- Choose 3 or 4 of the following: ----------------
2 x hard-cooked eggs sliced or chopped
1 can sliced black olives - (2 1/4 oz) drained
6 x mushrooms - (to 8) sliced
2 x green onions thinly sliced
Instructions:
Instructions: Stack the lettuce leaves, a few at a time, and slice crosswise very thin. Put them in a large bowl and toss with enough dressing to lightly coat.

Divide the lettuce among individual large plates or shallow bowls. Equally portion the seafood and garnishes among the salads, arranging them in a wagon-wheel pattern.

This recipe yields 4 servings.

Comments: Take advantage of the prep work already done at your local grocery store by picking up washed lettuce and salad toppings from the salad bar. But this meal-in-a-salad is a snap even if you do all the work yourself.
