Ingredients:
Amount Ingredient
4 tbl butter
24 x or more 1/2 inch cubes of raw fish, such as salmon, halibut, ling cod or perch
OR small scallops or shrimp OR any other type of fish or seafood
1/3 cup sliced mushrooms
1 med lemon
Salt and pepper to taste
A few drops Tabasco sauce
2 tsp minced garlic
2 tsp minced shallot
2 cup chopped fresh spinach
1/4 cup dry vermouth
4 x eggs, beaten
Instructions:
Instructions: Heat butter in skillet over medium-high heat. Saute fish and mushrooms in butter. Add juice of lemon, salt and pepper, Tabasco, garlic and shallot. Saute until fish flakes, for a total cooking time of 4 or 5 minutes, depending on thickness of fish.

When fish is almost cooked, add spinach. Deglaze pan with vermouth. When vermouth is almost evaporated, add eggs. Cook until eggs are set. Serve on toasted garlic bread. Karen Karpen, from The Best of The Ark and More by Nanci Main and Jimella Lucas
