Instructions: Curry glaze:
Heat all ingredients together until butter is melted. Mix well. Peel onion and quarter. Separate pieces. Cut capsicum and bacon into 2 cm squares. Cut fish into 2cm cubes. Skewer seafood, bacon and vegetables alternately onto wooden or metal skewers. Place on an oven tray and brush with glaze. Grill under high heat for 2-3 minutes on each side, brushing liberally with glaze during cooking. Alternately, cook in a hot oven. Serve on a bed of saffron rice and pour remaining glaze over.
