Instructions: Peel and devein prawns cut fish fillets into 2 cm cubes.
Place vermicelli in large bowl. Pour over hot water to cover. Stand 10 minutes: drain. Combine fish stock in a pan with spring onions lemon grass curry paste sambal oelek shrimp paste and turmeric bring to the boil. Reduce heat to low simmer for 3 minutes. Add prawns fish and coconut milk simmer for 3 minutes. Remove lemon grass. To serve place lettuce and vermicelli into bowls add soup sprinkle with mint. Water or chicken stock can be used instead of fish stock. Serves 4 Email this Recipe:
