1 can baby clams
1/2 cup dry white wine
1 pkt cooked shrimp, thawed (12 oz.)
1/4 cup butter
1 clv garlic
1/2 cup sliced mushrooms
2 lrg tomatoes, peeled, seeded, chopped ( I use more, and in winter I use 1 large can tomatoes - 28 oz)
1/2 tsp salt
1/2 tsp thyme
1/4 cup chopped green onion
1 pkt (8 oz) spaghetti or spaghettini (I use linguini)
1/4 cup butter
1/4 cup chopped parsley
Instructions:
Instructions: Drain clams reserving 1/3 cup of juice. Rinse clams. Melt butter and saute garlic and mushrooms. Add tomatoes, clam juice, wine, salt and thyme. cook uncovered 10 minutes or so, until some of the liquid evaporates. In the meantime, cook spaghetti according to package directions. Add shrimp, clams (and any other seafood you like), and green onion to sauce; reheat 2 minutes. Toss pasta with butter and parsley. Serve with seafood sauce. sprinkle each portion with 1 tbsp parmesan cheese.
