Instructions: Pat zucchini dry w/ paper towel. In a bowl, mix zucchini with spinach, tuna/salmon, cream cheese, ricotta, egg substitute, salt & dill week.
Preheat oven to 375 F. On waxed paper, layer phyllo sheets, spraying each lightly with Pam. Starting along long side of phyllo, spoon seafood mixture to about 1/2" from edges to cover 1/2 of rectangle. From mixture side, roll jelly-roll fashion. Place roll, seam side down, on a cookie sheet. Spray top of roll lightly with Pam. Cut 12 slashes on top of strudel. Bake 35-40 minutes until golden. Cool on wire rack for 5 minutes for easier slicing. Serves 6. Email this Recipe:
