Ingredients:

4 x middlecut salmon fillets skinned pin bones removed (about 200g each)
extra virgin olive oil
450 gm tomatoes diced and patted dry
1/2 x red onion peeled and diced
2 clv garlic peeled and finely chopped
1/2 med cucumber diced and patted dry
1/2 x green pepper diced
Instructions:
Instructions: Rub the salmon with olive oil leave for half an hour or so.

For the salsa combine the remaining ingredients season and add a shake of cayenne.

Stir in 1 tbsp olive oil.

Add some chopped black olives if you like.

Heat a frying or griddle pan to very hot this can take 10 minutes.

Smear with a little oil and reheat to very hot.

Add the salmon fillets season leave untouched for 2 minutes to form a crust.

Turn season and cook to your liking: 2 to 5 minutes depending on thickness.

Serve with the salsa.
