4 x sea scallops
1 tsp white truffle oil
2 cup warm mashed potatoes
Demiglace (Knorr-Swiss brand is reliable)
Mixed microgreens
Dash of extra virgin olive oil
Instructions:
Instructions: Heat non-stick skillet till hot but not burning. Spread a little butter on the flat sides of scallops and place, flat side down, in skillet. Sear until just cooked, about 2 minutes. Sear scallops until just cooked, about 2 minutes.

Set aside.

Stir truffle oil into mashed potatoes. Set aside.

Heat demiglace in pan. Meanwhile, lightly dress microgreens with oil, add salt and pepper.

To serve, spoon mashed potatoes onto center of a large dinner plate. Set dressed greens on top. Surround potatoes with scallops. Drizzle with demiglace.
