1 tbl sesame seeds
2 tsp vegetable oil
3/4 lb turkey breast cutlets cut 1"-wide strips
2 x garlic cloves finely chopped
4 cup broccoli florets
6 x green onions cut 1 1/2" lengths
1/2 cup reduced-sodium chicken broth
1 tbl soy sauce
1/8 tsp hot red pepper flakes (optional)
Instructions:
Instructions: In a large nonstick skillet, heat sesame seeds over medium heat, shaking pan and stirring often until seeds are just golden brown. Remove seeds from pan to a small bowl and set aside.

In the same skillet, heat oil over medium-high heat. Add turkey and garlic; cook 2 minutes, or until lightly browned, stirring constantly. Add broccoli, green onion, chicken broth, soy sauce, and pepper flakes, if using. Cook 3 minutes, or until broccoli is tender-crisp, stirring often.

Meanwhile, arrange lettuce on a serving platter or divide among individual plates. Top with the turkey mixture, sprinkle with sesame seeds, and serve immediately.

This recipe yields 4 servings.

Comments: For a fiber boost, serve this dish with whole wheat pasta, or the usual white or brown rice, instead of shredded lettuce.
