1 lb Shad fillets, boned, skinned
Salt, to taste
White pepper, to taste
1/4 cup Dry white wine
1 tbl Lemon juice
1/4 cup Chopped sorrel leaves
Instructions:
Instructions: PLACE SHAD IN A MEDIUM saute pan and sprinkle with salt and pepper. Add the wine and lemon juice and sprinkle the pan with sorrel. Cover and place over medium heat for 8 minutes. Remove the shad from the pan and keep warm on a plate. Add the butter and cook, stirring with a wooden spoon, until incorporated. Pour the sauce over the fish and serve immediately.
