4 lb beef shanks
1/3 cup flour
1/4 cup veggie oil
1 lrg onion, coarsely chopped
4 med carrots, diced
3 stalk celery, diced
1 x clove garlic, minced
1 can (16 oz) diced tomatoes
1/2 cup dry white wine
1 tsp salt
1/2 tsp dry thyme, crushed
1/4 tsp ground pepper
2 cup seedless grapes
2 tsp lemon juice
Instructions:
Instructions: Shake shanks and flour in a clean dry bag until shanks are lightly coated.

Brown shanks in oil over medium-high heat a few at a time; Remove and set aside.

Add onions, carrots, celery and garlic; cook until onion is tender. Return shanks to pan, add tomatoes, wine, salt, thyme, and pepper. Bring to a boil; reduce heat, cover and Simmer 1 to 1 1/2 hours or until tender. Stir in grapes and lemon juice; cook grapes until just heated. Sprinkle with parsley before serving.
