Instructions: Heat oven to 500 degrees. Heat a medium cast-iron skillet or grill pan over high heat until it begins to smoke. Rub steak lightly with oil, and season with salt and pepper. Place steak in pan, and cook until brown 1 to 2 minutes. Turn, and brown second side, 1 to 2 minutes.

Transfer to oven, and cook to desired doneness, about 7 minutes for medium-rare. To check the meats doneness, press the surface gently with your fingertips. Rare meat will feel fleshy to the touch and appear slightly bloody; medium-cooked meat will be a bit firmer and emit a pink liquid; and a well-done steak will feel firm and release brown juices.
