Instructions: Cook potatoes in boiling, salted water until just tender; drain. Peel and cut lengthwise into 1/2 inch slices. Arrange in 13 x 9 x 2 dish. Sprinkle with a little salt. In saucepan combine brown sugar, cornstarch, 1/2 t. salt. Blend in orange peel and juice; add raisins. Cook and stir over medium heat till thickened and bubbly; cook 1 minute more. Add butter, sherry and nuts, stirring until butter is melted. You may add crushed pineapple, sliced apricots, mandarin oranges. I add crushed pineapple and mandarin oranges. Bake at 325 for 30 minutes or until potatoes are well glazed. Baste occasionally.
