25 gm butter
25 gm flour
300 ml single cream
25 gm caster sugar
Instructions:
Instructions: Melt the butter in a small pan stir in the flour and cook for 1 to 2 minutes.

Gradually stir in the cream and bring to the boil stirring all the time.

Remove from the heat and stir in the sherry.

Add sugar according to taste this will depend upon the type of sherry used. Taste and serve hot.

For those who prefer a sauce rather than a butter to go with their christmas pudding this is a creamy mixture whish is easy to make and keep warm.
