Ingredients:

1 med Leg of lamb, cubed 1"x1"
----------------- MARINADE ----------------
1 tsp Salt
1 tsp Black pepper
2 x -(up to)
4 tsp Paprika (for color and flavor)
1 x -(up to)
3 tsp Ground coriander seed
3 tbl Virgin olive oil (best quality)
3 tbl Tomato sauce
1 x -(up to)
2 x Onions chopped
----------------- EGGPLANT ----------------
4 med Eggplants
Instructions:
Instructions: Mix marinade into lamb, cover, and let sit for at least 12 hours Skewer and grill over medium coals

Rub the eggplants with oil, and after lamb is done to your liking, roast eggplants over coals. When wrinkled and soft, scoop out eggplant and serve as a side dish with salt and pepper.
