1 lb Fresh carrots unpared, shredded
3 tbl Orange juice concentrate frozen, undiluted
1/4 cup Water
1/4 cup Raisins
Pinch ground cinnamon
Instructions:
Instructions: In a large non-stick saucepan or skillet with a lid, combine shredded carrots with remaining ingredients. Simmer, covered, 3 minutes. Uncover and simmer an additional 2 to 3 minutes, until nearly all the liquid is evaporated.

Makes 5 servings, about 70 calories each.
