One chicken, about 2 3/4 to 3 pounds, lightly boiled, skin removed and discarded, boned and shredded. Use the bones and skin for a later soup stock. Place the shredded chicken in a bowl. Mix the remaining ingredients together to form a salad dressing. Toss with the chicken and arrange on a platter. Garnish with more chopped green onion, if desired. This recipe serves 6 to 8. Comments: This dish can be served as a salad course with a garnish of lettuce or served on crackers as an appetizer.
