Instructions: 1. Place pork in a plastic ziplock freezer bag. Pound the pork until it is 1/8-inch thick. Remove from the bag and cut into strips 1.5-inch wide. Cut into 2x1/8x18-inch strips. Return to the bag. Add the marinade ingredients. Seal the bag, removing the air. Knead the contents to blend and coat. Let rest in the refrigerator for 30 minutes. Remove from the refrigerator to warm on the counter for no more than 10 minutes.
2. Prepare the remaining ingredients. Heat a wok over high flame. Spray and add half the oil. Rotate pan to heat oil. Add the garlic and saute 30 second. Add the pork and stir fry until no longer pink. 3. Make a well in the center of the wok and add the bell peppers. Stir and saute for 1 to 2 minutes or until almost soft. 4. Make a well in center. Add the remaining oil if necessary; add the celery. Stir and saute for 2 minutes. Add the onion and cilantro. Stir and fry for 30 seconds. Serve hot. Offer soy sauce. GOOD rice or with peanutty noodle dish such as "Angel Hair Pasta with Peanut Sauce 4pts." TIMING. Prepare the noodle dish while the pork marinates.
