1 Cream butter and sugar until light and fluffy 2 Beat in egg 3 Stir in sieved flour and lemon rind to form a stiff dough 4 Knead lightly and roll out to i/4in (5mm) thick 5 Cut into required shapes and place on lightly greased baking trays 6 Bake in preheated oven until light golden in colour 7 Place on a wire rack to cool Variations: approx 56g chocolate drops or 56g chopped nuts or 56g chopped peel Add any of the above with the flour servings: 20 biscuits small oven: 180 degrees C approx 15-20 minutes PREHEATED middle shelf fan oven: 170 degrees C approx 10-15 minutes Email this Recipe:
