2 cup cooked brown rice
1/2 cup bean sprouts
1/3 cup diagonally sliced green onions
1 lb cooked peeled medium shrimp
1/2 oz chickpeas -- drained
6 oz frozen snow peas -- thawed
1/4 cup rice vinegar
1 tbl low-sodium soy sauce
1 tbl dark sesame oil
2 tsp water
1/2 tsp grated peeled fresh ginger
1/2 tsp brown sugar
1/4 tsp pepper
Instructions:
Instructions: 1. Combine first 6 ingredients in a large bowl: toss well.

Combine vinegar and next 6 ingredients (vinegar through pepper)

in a bowl; stir well with a whisk. Pour over rice mixture; toss well. Cover and chill. Garnish with cilantro, if desired.

Yield: 6 (1 1/3 cup) servings.
