2 tbl vegetable oil
3 tbl minced shallots
1/2 cup minced green, yellow, and/or red pepper
1 lb small bay shrimp chopped
2 lrg zucchini shredded and drained
1/4 cup heavy cream
1 cup bread crumbs
3 x eggs
1 tbl Cajun seasoning
1 dsh hot pepper sauce
1 dsh Worcestershire sauce
2 tsp salt
1/2 cup shredded Parmesan cheese
oil for frying
----------------- REMOULADE SAUCE: ----------------
1/2 cup mayonnaise
1 tbl Creole or brown mustard
3 x green onions thinly sliced
1 tbl crushed garlic
1/4 tsp salt or to taste
1 dsh hot pepper sauce
1 dsh Worcestershire sauce
1 tsp lime juice
Instructions:
Instructions: In a large skillet over medium heat, fry shallots and peppers in oil until soft. Add shrimp and cook about 5 minutes. Remove and transfer to large bowl. Add zucchini, cream, bread crumbs, and eggs. Add seasonings and Parmesan. Heat oil in a skillet over medium heat, covering the bottom, and drop mixture by the tablespoon into the hot oil, frying on one side, turning over and frying on the other side until golden brown.

To make sauce: In a large bowl, blend together mayonnaise, mustard, green onions, garlic, seasonings, lime juice, and lime zest. Serve with Shrimp Cakes.
