Ingredients:
Amount Ingredient
3/4 oz reduced fat cream of celery soup
3/4 oz reduced fat cream of chicken soup
1/2 lb shrimp frozen
1 cup long-grain rice uncooked
1/2 cup onion chopped
1/2 cup green bell pepper chopped
4 oz Mexican tomatoes
3 tbl butter melted*
Instructions:
Instructions: * Original called for 6 tbsp butter.

Preheat oven to 350F. Grease shallow baking dish. Mix soups together; add remaining ingredients and mix well. Pour into baking dish and bake uncovered for 1 hr. After 25-30 minutes, stir casserole so rice will cook evenly.

Had this for dinner last night and it was excellent. We used to have a casserole just like this, but with chicken, growing up (and no tomatoes). This was originally posted to TNT by HRH Wysiwyg. Thanks!

I ended up adding the entire 14.5 oz can of mexican style tomatoes without draining, and it was great (I wondered if the 4 oz was a typo - where do you ever find that size in canned tomatoes?). It also took about 1 1/2 hours of cooking instead of the hour. I know we like large servings and I would guess this was a 6 serving (7 WW points) casserole rather than the 8, but then I only served it with rolls and a green salad.
