We used to have a casserole just like this, but with chicken, growing up (and no tomatoes). This was originally posted to TNT by HRH Wysiwyg. Thanks! I ended up adding the entire 14.5 oz can of mexican style tomatoes without draining, and it was great (I wondered if the 4 oz was a typo - where do you ever find that size in canned tomatoes?). It also took about 1 1/2 hours of cooking instead of the hour. I know we like large servings and I would guess this was a 6 serving (7 WW points) casserole rather than the 8, but then I only served it with rolls and a green salad. Email this Recipe:
